One week into 2012 and most of my New Year’s resolutions are out the window. 1. Exercise more. (I’m exercising my fingers on the keyboard. That counts right?) 2. Spend less. (Just bought a sexy new 10″ Shun Chef knife. I think I cried tears of joy after using it for the first time.) 3. Swear Less. (Too beeping beep hard.) 4. Drink less. (I think this was added to the list after my New Year’s Eve hangover.). So what’s left. Cook more. That I can do.
First recipe for the 2012. Fried Rice. Loaded Fried Rice. And I mean LOOAADDEED. It’s the perfect meal. The boyfriend asked me to make it. I usually do not make it but I like to let him think he’s the boss once in awhile.
3 cups day old jasmine rice
½ cup diced Chinese Sausage
6 oz whole deveined shrimp
½ cup sliced asparagus
1 cup sliced shitake & button mushrooms
½ diced yellow onion
2 minced garlic cloves
½ cup peas and carrots
2 tablespoon fish sauce
1 tablespoon oyster sauce
1 tablespoon sweet soy sauce
1 tablespoon Golden Mountain Seasoning Sauce
1 tablespoon mushroom flavored soy sauce
1 tablespoon garlic oil or 2 teaspoon sesame oil
What’s great about fried rice is that you can add anything to it. It’s often made with peas and carrots. But whatever vegetable you have on hand will work.
This is true with the protein. You can leave out the meat or shrimp for a vegetarian option. I like mine with Chinese Sausage. The Chinese Sausage or Lap Cheong is a sweet cured sausage. A bit fatty but so good with rice.
Start my mixing all the ingredients for the seasoning sauce in a small bowl and set aside.

Next, on high heat add the diced Chinese Sausage, onions, and garlic to a wok or large pan. When the onions are browned and the sausage crispy on the edges, add the shrimp. Once the shrimp is almost cooked, remove the entire mixture from the pan.
Add 3 tablespoon or more of oil to the pan. Yes more oil. It’s called Fried Rice not Low Fat Brown Rice. Turn up the heat. Once the oil is heated, add the rice and fry for a few minutes. Season the rice by adding a few tablespoons of the seasoning mixture. Mix and taste. Add more of the seasoning sauce to taste.
Lastly, add the eggs, chinese sausage, shrimp and vegetables. Mix thoroughly and serve.
